Peanut Butter Caramel Protein Bars

Ingredients:
Base:
1½ cups (240g) oat flour
1 scoop (34g) protein powder*
2 TBS Saharan Sustenance Date Sugar
3 TBS melted coconut oil
4 TBS Saharan Sustenance Date Syrup
Caramel:
½ cup (160g) Saharan Sustenance Date Syrup
¾ cup (170g) peanut butter
Topping:
3.5oz (100g) melted chocolate**
¼ cup chopped peanuts
Directions:
Combine the oat flour, protein powder and Saharan Sustenance Date Sugar.
Mix in melted coconut oil and 4 TBS Saharan Sustenance Date Syrup; stir until well combined.
Line a standard-sized loaf pan with parchment paper.
Press the base mixture into the pan until packed evenly.
For the caramel, mix together 160g Saharan Sustenance Date Syrup and 170g peanut butter until smooth and completely combined.
Pour and smooth that mixture evenly over the base.
Place in the freezer for 20 minutes to allow the caramel to become firm.
Remove from the parchment and cut into 12 even bars.
Sprinkle chopped peanuts on each bar.
Drizzle with melted chocolate.
Keep in an airtight container in the refrigerator, or in the freezer for a frozen treat.
* The recipe was made using chocolate protein powder. Feel free to use your favorite flavor for variety!
